According to Mintel research, 25% of diners are interested in seeing more of lesser known ethnic cuisines on menus such as Caribbean, Japanese and Korean. This rises to a third for Mediterranean cuisine (eg Greek, Turkish, Spanish, Moroccan), signalling potential to mine these cuisines further. For instance, Persian influences have appeared on menus in 2015. The spiced stews and salads and
use of fresh herbs and fruits such as pomegranates tap into demand for aromatic and fruity flavours. We are fulfilling the consumers’ desire for experiencing new and exotic food and environment. Ethnic food continues to evolve in the UK foodservice market due to sustained consumer interest in
global flavours.
